Cilantro Lemon Salmon
Easy weeknight meal.
What you need:
- Wild Salmon
- Lemon (2)
- garlic
- Cilantro
- Rosemary
- olive oil
- salt and pepper
Cilantro Sauce:
This cilantro sauce is a staple in our house. Great to use on any meat or salad. Store in frig after you make; leave on counter while you’re cooking or heat up a little bit in microwave to loosen up.
In a mini chopper combine one bunch of cilantro (stems removed), 3 cloves of garlic, squeeze 1 lemon, 2 tablespoons of olive oil (you can add more or less to your preference. Pulse until consistency similar to a pesto sauce.
Next,
- Slice 3 thin slices of lemon. I use this as my base which eliminates the skin from sticking to the pan (I really try to refrain from cooking with foil, etc…
- Lay the salmon on top of the lemon slices.
- Top with about 2 tablespoons of Cilantro sauce, drizzle olive oil over the top, squeeze remainder of lemon, salt and pepper and a sprig of rosemary.
Bake 400 for 25 minutes. Serve over a salad or with a side of veggies.
