Happy Bowls with Coconut Turmeric Rice
Happy Bowls!!!
Bowls are a favorite in our house for dinner and I make this rice as our base. We top the rice with different veggies + meat = happy bowl. Some of our favorite combinations are
ground lamb+ brussel sprouts + carrots
hamburger meat + squash/zucchini
steak + asparagus
chicken + broccoli
You can really add any meat and veggie combo to your liking. This rice is a staple in our frig for dinner bowls or an easy weeknight side. The kids love assembling their own bowl, brings them a sense of pride and as you know~if they make it they eat it 😉 !
I always chop up a variety of toppings and leave them on the cutting board for assembly (arugula or lettuce, sprouts, cherry tomato, cucumbers, radish, salsa, guacamole, etc….

Coconut Turmeric Rice Recipe:
Uncooked rice | Water | Coconut oil | Turmeric | Sea salt | Butter/ghee |
1 cup | 1 ½ cup | 3 tablespoons | 1 tablespoon | 1 teaspoons | 2 tablespoons |
2 cup | 3 cup | 6 tablespoons | 2 tablespoon | 2 teaspoons | 3 tablespoons |
3 cup | 4 ½ cup | 9 tablespoons | 2 ½ tablespoon | 3 teaspoons | 3-4 tablespoons |
Bring water to boil. Add in uncooked rice, coconut oil, turmeric, sea salt, butter/ghee. Stir. Cover and reduce to low for 20 minutes. Taste to see if rice is tender enough, continue cooking if not (I have had to add more water if the rice needs to keep cooking, depending on heat from stove top). Set aside and get ready to have a Happy Bowl!
